Easy Saltine Toffee Cookies for December 18th. This recipe really had me curious. I could not imagine Saltine Crackers being used in a cookie recipe. But, this cookie is crunchy, buttery, and somewhat addicting. You will find a delicious combination of sweet and salty. I love that combination. I always dump a box of Junior Mints in my popcorn when I go to the movies so I get that flavor combination; sweet and salty.

What You Need to Make Saltine Toffee Cookies

  • 4 ounces saltine crackers about 40 crackers (enough to cover a cookie sheet)
  • 1 cup butter
  • 1 cup dark brown sugar
  • 2 cups semisweet chocolate chips
  • ¾ cup chopped pecans or walnuts

Directions for Saltine Toffee Cookies

  • Preheat The Oven: Preheat oven to 400 degrees F (205 degrees C).
  • Next Step: Line cookie sheet with saltine crackers in a single layer.
  • Make The Toffee:In a saucepan combine the sugar and the butter. Bring to a boil and boil for 3 minutes. Immediately pour over saltines and spread t cover crackers completely.
  • Bake the Saltine Toffee Cookies: Bake at 400 degrees F (205 degrees C) for 5 to 6 minutes. Remove from oven and sprinkle chocolate chips over the top. Let sit for 5 minutes. Spread melted chocolate and top with chopped nuts.
  • Cool completely: Cut into squares or break into pieces. Store and Enjoy!!

So I think this recipe is going to become one of my favorites. Besides being so good it is also very easy and quick to make. I have had Saltine Toffee Cookies in the past but have never made it myself. I have read that it is also called Christmas Crack and I can understand why!!
