What You Need to Make Watergate Salad:

  • 1 cup mini marshmallows
  • 1/2 cup chopped walnuts or pecans
  • 1 (8 oz) tub whipped topping (like Cool Whip), thawed
  • Optional: maraschino cherries for garnish
  • Putting It All Together:
  • In a large mixing bowl, stir together the pudding mix and crushed pineapple (juice and all) until well blended.
  • Carefully but thouroly fold in the marshmallows and chopped nuts.
  • Gently fold in the whipped topping until everything is beautifully combined.
  • Now we test our patience!
  • Chill for at least an hour before serving. (Overnight is even better!)
  • Top with a few maraschino cherries for a festive touch.

I mentioned above that Mom added extras to this recipe. You might want to try Coconut, Maraschino Cherries, maybe different kinds of nuts, or maybe no nuts. Use your imagination. Once I remember her using cottage cheese in it. I don’t think you can go wrong with anything you add to this recipe. You can even make it sugar-free by using sugar-free pudding and cool whip. You can try it with or without the pineapple juice from the can. I combine the pudding with the juice and let it settle for a few minutes before adding the remaining ingredients. It does seem to make it fluffier. The fluffier the tastier!

I remember sitting by the fire on the floor with a hammer and cracking the walnuts for this recipe. My older brother and I were in charge of nut-cracking every year. That is after we went out and collected the nuts from the ground around the tree in our yard. We lived way out in the country and we raised most of our food. We had cows, pigs, and a big garden. Apple trees, peach, and pear trees. I hated it then but would love to be able to go back there now.

Watergate Salad! I did not know that this was called Watergate salad until I started looking for the recipe for our Thanksgiving dinner this year. I have always loved this salad/dessert. Mom always made it for every holiday. It was one of the happy memories I have of my Mom. She would always add more to it than just what I have listed here.
