Chicken and Stuffing

Chicken and stuffing you say!! When it comes to quick and easy this is a great recipe that everyone will love!! It only takes about 15 minutes to put it together and 30 minutes to bake and you are ready to eat. It is also very versatile. You can add veggies to it and make it a one-dish meal or serve the veggies on the side. Or just add a salad and bread and your dinner is complete.

Here is what you need for Chicken and Stuffing

  • 1- 2/3 Cups of Hot Water
  • A Package of Stove Top Stuffing Mix for Chicken
  • 1 -1/2 pounds of skinless chicken breasts (you can cut into bite-size pieces if you want)
  • 1 or 2 cans of cream of mushroom, cream of celery or cream of chicken soup. I always use Campbells. I have tried other brands but in my opinion, Campbells has the best consistency and flavor.
  • 1/3 Cup of Sour Cream

Let’s Put It ToGether

First you want to set your oven to 400 Degrees
Then add the hot water to the stuffing mix: stir just until moistened (don’t over mix)
If you leave your chick breast whole:
Transfer the stuffing to an 13 X (baking dish) placing it in the center of the pan (sort of like you would a meatloaf).
Next if you leave the chicken breast whole, pound each one with a meat mallet a few times then place on top of dressing, try not to overlap the chicken pieces.
Mix the soup and sour cream until it is well blended and pour over the chicken and dressing.
Place on middle rack in the oven and bake at 400 degrees for 30 minutes.
Serve with Salad and Bread for a quick and easy dinner.

Alternate Directions

However, if you have cut up the chicken into bite-sized pieces you can prepare the dish in a little different manner.

First, place the chicken in a layer in the bottom of your 13X9 baking dish
Next, add 1 cup of frozen mixed vegetables
Then, Cover with the soup mixture
Lastly, Top with the stuffing
Place in over at 400 degrees for 30 minutes.

Either way you choose to serve this dish is it delicious. My kids and husband like it both ways. My husband being of Polish descent does not like his food mixed together. He wants his meat and potatoes separate on his plate and it took a while to even get him to like foods cooked together. This was one of the dishes that changed his mind about casseroles. As a result, he is now a big fan of foods cooked together as he calls it.
