December 11:  Cherry Dream Bars

 Cherry Dream Bars with Pineapple & Coconut. I think Evey is as much a Christmas Cookie fan as I am. She has submitted another great cookie recipe. However, this Cherry Dream Bar recipe has an added surprise! She has added pineapple and coconut to her recipe!!”This is one of my family’s Christmas Cookie ‘Musts’,  What is not to like with Cherry, Coconut & Pineapple.” I agree Evey! I love cherries, pineapple, and coconut so I don’t know how these cookies could not be delicious and a fan favorite.    

What You Need:

Cherry Dream Bars

COOKIE CRUST

  • 1/2 cup butter, softened
  • 1 cup flour 
  • 1/2 cup white sugar
  • Optional Coconut if you are a fan like Evey

FILLING

  • 1 can cherry pie filling
  • 8 oz. can crushed pineapple, drained well
  • 2 eggs
  • 1 tsp. baking powder
  • large pinch of salt
  • 1 tsp. vanilla extract
  • 2/3 cup sugar
  • 1 1/2 cups shredded coconut
  • 1 cup  pecans or walnuts, chopped

Preheat The Oven

Preheat your oven to 350 degrees.

Make the Cookie Crust

In a medium bowl, mix together the butter and 1/2 cup of sugar.

Add in the 1 cup flour and mix with a fork until crumbly.

Place the mixture in the bottom of a 9×13″ pan and pat out evenly.

Bake The Crust

Bake in the oven for 15 min. or until golden. Remove to cool slightly. 

While The Crust Bakes

Add the eggs to a large bowl and beat well.

Add in the 2/3 cup sugar and the vanilla and mix well.

In a small bowl whisk together the dry ingredients, baking powder, 1/3 cup flour, and salt.

Add this to the egg mixture.

Carefully fold in the pineapple, coconut, and nuts.

Spread cherry pie filling over the slightly cooled crust.

Add egg mixture over the pie filling.  

Bake In The Oven To Bake

Bake for 30 min.

Cool completely on a rack and then cut into squares.

Variations

You can use any pie filling, apple, peach, strawberry .. etc.
