December 4 Chocolate Crinkles

December 4th: Today the cookie for my 25 days of Christmas Cookies is being dedicated to my daughter Bekah. Today is her birthday. She is one of the sweetest, loving, caring people I know. She has raised three AMAZING kids and has a growing business where she makes every one of her clients look beautiful at Salon 11 in Germantown. Bekah’s favorite Christmas Cookie is Chocolate Crinkles so here is the recipe for the cookies that Bekah has made her famous.

Chocolate Crinkles Cookie

Ingredients

  • 1 cup unsweetened cocoa powder
  • 2 cups white sugar
  • ½ cup vegetable oil
  • 4 eggs
  • 2 teaspoons vanilla extract
  • Also, 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ cup confectioners’ sugar

Directions:

First: In a medium bowl, mix cocoa, white sugar, and vegetable oil.

Beat in eggs one at a time, then stir in the vanilla.

Next: In a separate bowl combine the flour, baking powder, and salt; then stir into the cocoa mixture.

Cover dough, and chill for at least 4 hours.

Start by Preheating the oven to 350 degrees. Line cookie sheets with parchment paper.

Now, Roll dough into one-inch balls.

Coat each ball with confectioners’ sugar before placing onto prepared cookie sheets.

Bake in preheated oven for 10 to 12 minutes.

Let stand on the cookie sheet for a minute before transferring to wire racks to cool.
